Little Oaties and a Slice of Heaven

Have you ever had heaven in your mouth? That sounds a bit dirty, no? Well, regardless, I have had heaven in my mouth...and surprisingly, it's in the form of an oatmeal pie.

You can even customize the filling with food coloring for holidays.

Here is the recipe. You must try!!!




Cookies
1-1/4 cups butter (softened)
1 cup brown sugar (packed)
½ cup sugar
1-1/2 cups flour
3 cups oats
1 egg
2 tsp. Vanilla
1 tsp. salt
1/2 tsp. Baking soda
¼ tsp. Cinnamon

Preheat oven to 375 degrees.

Beat butter and both sugars until creamy. Add egg and vanilla and mix well.

Lightly spoon flour into a dry measuring cup and level with a flat knife edge. Combine flour, baking soda, salt and cinnamon in a bowl. Stir. Add oats and mix well.

Add dry mix to butter mix and blend well. Drop by rounded tablespoons 2” apart on baking sheets lined with parchment paper.

Bake for about 10 minutes. Leave on pan for 2 minutes after removing from the oven.

Put cookies on a wire rack to cool completely. Once cookies are cooled completely, spread about 1 tbsp of filling between 2 cookies. Store in an air-tight container in the refrigerator.


Filling
½ c. soft butter
2 cups powdered sugar
1-2 Tbsp. Whipping Cream
1 tsp. vanilla

Combine all in a medium bowl. Beat on low until mixed well. Then, beat on high until light and fluffy.
